Dubai Chocolate Ingredients:

Makes: 2 x 500g (1.1lb) large chocolate bars
- 150g (5oz) kataifi pastry, chopped and separated
- 60g (2oz) butter
- 360g (12.7oz) pistachio paste
- 20g (0.8oz) tahini
- Fat pinch salt
- 500g (1.1lbs) dark or milk chocolate
How to Make Dubai Chocolate Bars:
- Prepare the Kataifi Crunch:
- Melt butter in a pan over medium heat.
- Add kataifi pastry and toast until golden and crispy (around 5 minutes). Set aside to cool.
- Make the Pistachio Filling:
- In a bowl, mix pistachio paste, tahini, and salt until smooth.
- Melt the Chocolate:
- Use a double boiler or microwave to melt the dark or milk chocolate in 30-second intervals. Stir until smooth.
- Assemble the Chocolate Bars:
- Pour half of the melted chocolate into silicone molds or a lined baking tray.
- Spread the crispy kataifi layer over the chocolate.
